Downtown Colfax has a new café and bakery that serves “healthy fast food.”
Sourdough Solutions isn’t your ordinary café – it specializes in sourdough food made with organic flour largely from the Central Valley. The restaurant says all of its food is “fermented in stages over several days, and then we add various seeds, grains, dried fruits, nuts, spices and hydrations to add even more nutrition and delicious flavor.”
The Abby is our favorite: It is built on a toasted Superseed Sourdough bread spread with house-made pesto, then topped with half an avocado with salt and pepper and melted pepper jack cheese.
The website states “Some people eat our long-fermented sourdough because it tastes incredible; some people eat sourdough because it makes them feel great; and other people eat sourdough because it is so healthy, and resolves gluten-intolerance and many other health issues.”
